Quick Pasta Salad

After running some errands this morning I stopped at the supermarket to grab something for lunch.  I decided to make some quick and easy pasta salad by just buying a box pasta and veggies from the salad bar.

I chose Buitoni ravioli's but any pasta would work including boxed dry pasta.  From the salad bar I loaded up green peppers, red onions, black olives, cucumbers and feta cheese. 



I then used salad dressing and bacon bits that I already had at home.  (These could also be purchased from the salad bar)  Today I used Caesar dressing, but any kind if oil based Italian dressing also works just fine. 

I started by chopping the salad bar mix. (About 3/4 of a pound of veggies/cheese for a 9-12 ox box of pasta) This can be done by putting in a bowl and just chopping everything at once right in the bowl. 

I then cooked the pasta according to the directions.  After straining the water, I ran the pasta under cold water (in the strainer) to chill.  Normally I would cook pasta al dente, but in this case I made sure the pasta was fully cooked.  This is because since I was flash chilling the pasta, it would not have the chance to continue to cook in its own heat as pasta usually does  . . . plus cold al dente pasta just tastes rubbery.

After I chilled the pasta I added about a teaspoon of salad dressing and mixed.  I then added the pasta to my salad mix, and then mixed in the dressing and bacon bits. I don't use precise measurements and just kind of eye-ball it.  You could put in as much or as little bacon bits as you prefer (or none at all) and probably about 1/2 cup of dressing.

I then chilled for 10 minutes before eating.
